The nights aren't that crazy in the priceless new cartoon musical, ''Adam Sandler's Eight Crazy Nights'' - well, two or three are. The rest are pretty festive and oh-so sincere. This might come as a shock to anyone who still believes that Sandler is merely a spiteful boy-man. But these are the same people who are running to ''Santa Clause 2'' and skipping his aching ''Punch-Drunk Love'' performance. Even so, the haters aren't wrong. They're just nearsighted.
